85 camaro 350 overheating?

my engine dosent have all the electronics its pretty much just straight motor.i will drive down the road a few blocks then the temp gage will jump from 100 to 200 really fast….radiator wont be hot but the engine is..i put a new temp gage and thermastate in today but its still doing the same thing i just removed the water pump i opened the back plate and when i spin the pully the propeller seems to spin freely and correct but i dont know much about them? should i replace the pump or what ? thanks!

Are you sure your system is full of coolant? Drill an 1/8″ hole in the edge of the thermostat so the air bleeds out of the engine when you fill the radiator.
200 degrees is a good temp for this engine to run at.
